Smoked Sesame Crusted Halibut With Tahini Mayonnaise
Ingredients:
For the fish
? 1 ½ lb. halibut filet, cut into 4 equal pieces
? ½ cup toasted sesame seeds
? ½ tsp. kosher salt flakes
? 1 Tbs. vegetable oil
? 1 tsp. sesame oil
? ½ cup pickled ginger
For the mayonnaise
? 2 egg yolks
? 2 Tbs. lemon juice
? ¼ cup tahini paste
? 1 Tbs. soy sauce
? 1 ½ cup vegetable oil
Directions:
1. Crush sesame seeds and salt using a mortar and pestle or spice grinder. The end result should be lightly crushed seeds, not powder.
2. Blend vegetable oil with sesame oil and brush onto all surfaces of fish pieces.
3. Coat fish pieces with seasoned sesame seeds, patting them into place.
4. Place halibut onto the lower rack of the Memphis Pellet Grill and close the lid. Set the temperature to 225 degrees and smoke fish for 2 – 2 ½ hours, or until the internal temperature reaches 145 degrees.
5. For the mayonnaise, add egg yolks, lemon juice, tahini paste and soy sauce to a blender. Blend on high and very slowly drizzle in the oil. The dressing will emulsify to become a thick and creamy mayonnaise.
6. Serve the smoked sesame crusted halibut with the tahini mayo and some pickled ginger on the side. Enjoy!
