BBQ Island’s Classic Rotisserie Chicken Recipe

The most classic dish of all for your grill? A simple, delicious rotisserie chicken.

Rotisserie chicken always feels like a special event, and you'll enjoy serving a whole bird in all its glory to your guests. Best of all, this impressive meal is a cinch to prepare. We recommend serving it up with a crisp cole slaw and grilled corn on the cob for summer or a savory mix of grilled vegetables like potatoes, brussel sprouts and squash for the winter, but we're sure you'll come with your own creative serving suggestions for this versatile dish.

Rotisserie Chicken

Ingredients:

  • 1 whole fryer chicken

  • Kosmos Q Dirty Bird Rub

Directions:

  1. Remove whole chicken from package and prepare for rotisserie by removing neck and giblets. Trim any hanging skin and remove the tail.

  2. Preheat Lynx All Sear Grill to medium low on the two outer burners.

  3. Place chicken on spit rod firmly between rotisserie forks. Tighten forks to secure.

  4. Season chicken with a generous coating of Kosmos Q Dirty Bird Rub.

  5. Attach rotisserie spit rod to the motor and set to high. Close the lid.

  6. Cook chicken until internal temperature reaches 155 degrees.

  7. Finish chicken by setting the rear infrared rotisserie burner to high until thighs and breast reach an internal temperature of 165 degrees.

  8. Remove chicken from rotisserie spit rod and allow to rest for 15 minutes before carving to preserve the juices.

  9. Serve and enjoy!
